so the acid malt is my addition to adjust the pH but if you don't need it than don't put it in there.

For the record, I like to throw 1-2% acid malt in all my hoppy beers.

On second look that seems like the RR grist with a change in hops, right? Been wanting to do that one.
so the acid malt is my addition to adjust the pH but if you don't need it than don't put it in there.
I would need that adjustment too, which I would do with lactic acid.

Similar to Hop To It but the one published had two row and marris otter. I use pils instead. I started this grain bill when I was working on a row 2 Hill 56 like beer, all Simcoe RR beer. Give the grain bill a try, I also lowered the crystal a bit. The star of this is the hop combo IMO.On second look that seems like the RR grist with a change in hops, right? Yeah I don't know how you could fail with Citra and Chinook. Looks like morty got cute and threw some simcoe in the keg too. I was reading a blog (don't remember which one) where the guy was using that Hill 2 Row 56 grist over and over again evaluating single hops and hop combinations. I though that was a good idea too.

I used falconers flight along with Chinook and Citra for the dry hop. I wanted to use the FF up.
Well, as a side note how did you like the FF?

It was a great beer. I was always under the impression FF was developed to be a Simcoe substitute when there was a shortage. That is why I suggested morty use Simcoe in his version. From now on I will use Simcoe. To be honest, in the right ratio, I feel Chinook and Citra can mimic Simcoe. Up till I brewed this I was always afraid to use Chinook after some bad experiences early in my brewing career. I am glad I got over that, Chinook late in the boil is awesome.Well, as a side note how did you like the FF?

so I'm on keg #2. I waited to do the second dry hop of simcoe right before I put it on so it's got nice fresh hop aroma still. obviously some of the first dry hop is diminished but this is a pretty good compromise I think. still so tasty!
