I've been kicking an idea around for awhile for what Josef Groll would have brewed if he had fell in love with IPA. I'll probably brew this on Friday. I have a good clean slug of M84 lager yeast slurry in the fridge.  Mash schedule is step-infusion, 0 min additions are 175F whirlpool. Water is RO with ~50ppm of SO4 and 50ppm of Cl. I don't like a lot of sulfate with noble hops.

 

How's this looking? 7 gal batch BTW.

I've had a couple nice Imperial Pilsners over the years, which this might resemble.

Looking at reviews of some better rated Impy Pils, I dropped IBUs to 50. 60 may have been a bit much for a lager.

I've had a couple nice Imperial Pilsners over the years, which this might resemble.

Brewing this now. I rested at 131F for 30mins, added boiling water to reach 140F for 20mins, then decocted 4qts for 15mins, added that and enough boiling water to reach 154F for the final rest. Mash pH sitting at 5.3---what I like for pale beers. Brew day is going well.

This beer is coming along nicely. It fermented out at 49F in a few days then rested at 65F for D-rest, was dry hopped for 3 days before I started dropping temp at 5F/day until it hit 32F. I just racked to secondary with gelatin today. Squeezed the 1.5ozs of Saaz leaf dry hops out and drank it. Tastes like a freshly opened bag of Saaz smells. Tasty.
