I brewed this for as summer session beer. Hit a little higher OG than I intended but it was a great little beer.13.5 gal boil11.5 gal batch12# 2 row (Canadian Pale Ale Malt)6# malted rye1# Special roast70 min boilI think any C hop would work but....2 oz Simcoe - FWH1 oz Simcoe 601 oz Simcoe 101 oz Simcoe 0Wyeast 1010Minor brewday problems but ended up with an OG of 1.050, which was a little more than I wanted.This is really an ignored style when it's rye instead of wheat. It really rocked for an almost session beer. Went down easy on a hot summer day.So plan B is to do what I advocate for Am. Wheats - go over the top with IBUs and gravity. Brewing later this week and I suppose this crosses over to a RyePA but I'm sticking with the 1010 for this brew for the "tang" you get this time. Usually 1272 is my favorite my RyePA, drewseslu and I came up with a killer, "Third Day RyePA" using 1272. Time to move on and try another. Guessing I'll shoot for a hair under 1.060 and C hops to about 50 - 60 IBUs

I think I need to buy some more rye to try this out. would 1056 work for this?

Yes 1056 works fine. I just brewed an American Wheat 10 gallons and split it 5 gallons between 1010 and 1056. Should make for a tasty beer either way.

I like simcoe myself,on my to-do list to make one like that.Got to love the rye also.Looks good DJ. :frank:

I think it was within the guidelines IIRC. Been a year...... The SRM I got was not very dark. Guess I should check on the maltster. For a while SR went in a lot of beer brewed here. Love the stuff......... Off the top of my head 1010 would still be my fav for this. Any of the Cali yeasts should be fine and I would bet 1272 would serve it well to.

Based on your hop schedule I get an insanely high IBU number (~77) for a session beer. I'm using the ProMash default of 12% alpha acid for simcoe. Were your simcoes much less than that?Also, what was your mash schedule?

151df mash, 45 minutes. Recirculated mashout. I think the Simcoes were listed as 10% AA. Just a guess from another recipe brewed with them a few weeks later where I did write it down. And there probably was some degradation not factored in. It was pretty hoppy though. I think any C-hops would work.

I think I have 3 C-hops (cascade, cents, columbus)...

I would lean on the Columbus...not that it's a sub, but it's damn good!
